Armetriding Jam TartsArmetriding Jam Tarts™ ©

All of the family loved Mums jams tarts.
Easily knocked up by a super Mum.
I was fascinated by the cake trays.
Mum had a number of 6 and 12 hole cake trays, all of quite gorgeous design, they would be treasures today!

For variety, Mum would make some jam tarts in shallow trays

and some in deeper trays with sides of about one inch,
the variety and choice the two tray sides made was great.
It was like eating a completely different jam tart. 
But, both were excellent.

The Jam Tarts:
Armetriding Jam Tarts

Filling:
Armetriding black currant jam, naturally!

Pastry:
6 oz. flour
Pinch of salt
3 oz. margarine
A level tablespoon of sugar
One egg yolk

(Armetriding Farm Eggs of course)
Cold water

(Mum always used spring water, its all we had)

Heat oven to Hot (400º F) or use my Mum's black CI wood stove.

Place the flour and salt into a bowl and rub in the butter until the mixture is crumbly.   Slowly stirring in the sugar. 

Add the egg yolk and a little water, mixing to a firm dough .

Roll the pastry mix onto a floured working surface.
Using a suitable circular cutting mask (Mum use an upside down tea cup) cut out tart cases and place into a 12-hole cake tray. 

Fill the pastry cases with about 1 teaspoon of
Armetriding black currant jam (naturally).
Then bake until the pastry is a pale golden brown and crisp.

Place aside to cool naturally.
