In the south east of the farm garden, Mum had a great apple tree. It was a cooking apple tree. It was about the only tree in the garden that we did not scrump! It was impossible to scrump this tree. Unlike the tree in the Garden of Eden, the fruit was impossible to eat (very sour) as it was a real "cooking apple tree". But, once cooked the fruit, stewed or in a pie, was beautiful! The Apple Crumble: 14 oz cooking apples, 2 oz. granulated sugar (if real cooking apples like Mum's, use 3 oz of sugar) 1 tablespoon water Crumble Topping: 5 oz. whole-meal flour 3 oz. butter 2 oz. soft brown sugar Set oven to moderate (350'F). Peel, core and cut the apples thick slices. Place the apples, water and sugar into a large saucepan to simmer, uncovered, until the apple is soft (use a skewer to check). Strain the juice off the apples (keep the juice for later, Mum would use everything). Place the strained apples in a greased oven dish. Reduce the apple juice in the saucepan until very syrupy and then pour over the apples. Mum made the topping by rubbing the butter into the flour and then stirring in the sugar slowly. Cover the apple evenly with the crumble mix and cook in the moderate oven for 30 minutes. Always serve hot, with plenty of thick yellow custard.
